Acidity regulator

A food ingredient added to adjust or maintain a product’s acidity, often by changing its pH or resisting pH changes.

pH: A logarithmic measure of hydrogen-ion activity in an aqueous solution. The pH value is the main measure acidity regulators change or stabilize.
Food preservation: Methods used to slow spoilage and extend the usable life of food. Lowering pH can inhibit many spoilage organisms and support other preservation methods.
Acid: A substance that donates protons or accepts electron pairs, depending on the chemical theory used. Food acids are common regulators and define the acidic side of pH adjustment.
Acidulant: A food additive used primarily to impart or increase an acidic taste or lower pH. Acidulants are a narrower functional category; acidity regulators also include ingredients that raise or stabilize pH.
Buffer solution: A solution that resists changes in pH when small amounts of acid or base are added. Buffering lets some regulators maintain a food’s acidity despite later additions or reactions.
Food fermentation: The transformation of food by microorganisms or their enzymes, often producing acids, gases, or alcohol. Regulators can standardize acidity before or after fermentation.
Base (chemistry): A substance that accepts protons or donates electron pairs, depending on the chemical theory used. Basic ingredients neutralize acids and raise food pH.
Preservative: A substance added to food to delay deterioration caused by microorganisms or chemical change. Some acidity regulators aid preservation, but preservation is not their defining function.
Acid–base reaction: A chemical reaction involving transfer of protons or formation of water from acidic and basic species. Neutralization reactions explain how alkaline regulators reduce acidity.
Processed cheese: A manufactured cheese product made by blending cheese with emulsifying salts and heating it. Citrate salts regulate acidity while helping create a smooth, stable cheese mixture.
