Alaska pollock

Alaska pollock (Gadus chalcogrammus) is a North Pacific fish in the cod family. It is harvested extensively for its mild-flavored flesh and processed into products such as surimi.

Surimi: A processed fish paste made by washing minced fish muscle and combining it with other ingredients. Alaska pollock is a principal raw material for surimi products such as imitation crab.
