Knowra Anethole Anethole Anethole is an aromatic organic compound that gives anise and fennel oils much of their characteristic sweet, licorice-like scent and flavor. It is used in foods, fragrances, and other products.
Phenylpropene : A class of aromatic compounds with a three-carbon side chain attached to a benzene ring. Anethole belongs to this structural family, which includes several plant-derived aroma compounds.
Anise oil : An essential oil distilled from anise seeds, rich in trans-anethole. It is a major natural source of the compound and a familiar flavoring ingredient.
Aromatic compound : An organic compound containing a conjugated ring system with unusual electronic stability. Anethole’s benzene ring places it among aromatic compounds.
Estragole : A plant-derived aromatic compound also called methyl chavicol, found in tarragon, basil, and other herbs. It resembles anethole structurally but has a different arrangement of its side-chain double bond.
Trans-anethole : The more common geometric isomer of anethole, with its aromatic ring and methoxy group arranged across the double bond. This is the principal form found in commercial anethole and many essential oils.
Fennel oil : An essential oil from fennel that commonly contains trans-anethole along with other volatile compounds. Its sweet aroma and flavor partly arise from anethole.
Methoxy group : A functional group consisting of an oxygen atom bonded to a methyl group and another atom or group. Anethole’s methoxy substituent affects its chemical behavior and contributes to its odor profile.
Eugenol : An aromatic compound in clove oil with a warm, spicy odor and a phenolic hydroxyl group. It is another widely used plant-derived aroma chemical, but its scent and functional groups differ.
Cis-anethole : The less common geometric isomer of anethole, with a different arrangement around its carbon–carbon double bond. Its different geometry contributes to the distinct properties of anethole isomer mixtures.
Star anise : The fruit of Illicium verum, a spice whose essential oil is rich in trans-anethole. It supplies anethole for foods, drinks, and flavor extracts.
