Asafoetida

Asafoetida is a pungent dried gum resin obtained from Ferula plants. Its sulfurous aroma mellows during cooking, where it seasons many South Asian dishes.

Tadka: A South Asian cooking technique that briefly fries spices in hot fat before adding them to a dish. Asafoetida is often briefly fried in oil or ghee during this aromatic tempering step.
