Aseptic processing

A food-preservation method that sterilizes food and packaging separately, then fills and seals the package under sterile conditions.

Ultra-high-temperature processing: A heat treatment that rapidly sterilizes food at very high temperatures before aseptic packaging. It is a common way to sterilize liquid foods before filling.
Shelf-stable food: Food that remains safe and suitable for consumption at room temperature for an extended period when unopened. Aseptic processing makes many packaged foods shelf-stable without refrigeration.
Retort pouch: A flexible, heat-resistant package in which food is sterilized after sealing. Unlike aseptic processing, the sealed package and food are sterilized together.
Cold chain: A temperature-controlled supply chain that keeps perishable goods within specified conditions from production through delivery. Shelf-stable aseptic products reduce dependence on refrigerated transport and storage.
Commercial sterility: A condition in which food contains no microorganisms capable of growing under normal, unrefrigerated storage conditions. It defines the microbial target for shelf-stable aseptic foods.
UHT milk: Milk treated at ultra-high temperature and packaged aseptically to remain shelf-stable unopened. It is a familiar example of aseptic processing in practice.
Canning: Food preservation by sealing food in containers and heating them to destroy spoilage organisms and pathogens. Conventional canning generally sterilizes food after it is sealed in its container.
Food safety: The practices and conditions that prevent food from causing illness or injury. Sterile processing and protection from recontamination are essential safety controls.
Aseptic filling: Filling sterilized containers with sterilized product in an environment designed to prevent contamination. It is the stage where sterile product enters sterile packaging.
Fruit juice: A liquid extracted from fruit, often heat-treated and packaged for storage and distribution. Aseptic filling preserves juice while limiting flavor damage from prolonged heating.
