Knowra Basmati Basmati Basmati is a group of aromatic, long-grain rice varieties whose slender grains elongate during cooking. Its characteristic aroma comes largely from the compound 2-acetyl-1-pyrroline.
2-Acetyl-1-pyrroline : A volatile compound that gives fragrant rice and some other foods a popcorn-like aroma. This compound is a major source of basmati’s characteristic fragrance.
Biryani : A South Asian rice dish in which rice is cooked with spices and other ingredients, often meat or vegetables. Basmati’s long, aromatic grains are commonly used in biryani.
