Caffeic acid

Caffeic acid is a hydroxycinnamic acid found in many plants, often bound within larger molecules. Its two phenolic hydroxyl groups contribute to its antioxidant activity.

Hydroxycinnamic acid: A class of phenolic acids built from a C6–C3 carbon skeleton and found widely in plants. Caffeic acid belongs to this structural family of plant compounds.
Antioxidant: A substance that slows oxidation by reacting with oxidants or interrupting oxidation chains. Caffeic acid is studied as an antioxidant because it can donate electrons or hydrogen atoms.
Coffee: A brewed beverage made from roasted seeds of plants in the genus Coffea. Coffee contains caffeic acid, largely as chlorogenic acids that can yield it during processing or digestion.

Coffee roasting: The heat-driven transformation of green coffee seeds that develops their characteristic color, aroma, and flavor. Roasting changes chlorogenic acids and therefore affects caffeic-acid-related compounds in coffee.
Pharmacokinetics: The study of how a substance is absorbed, distributed, metabolized, and eliminated by the body. Its metabolic transformations help determine which caffeic-acid forms reach tissues.
Catechol: An aromatic compound with two adjacent hydroxyl groups on a benzene ring. Caffeic acid’s adjacent hydroxyls form a catechol group that supports antioxidant reactions.
Oxidative stress: A state in which oxidant production exceeds the capacity of biological antioxidant defenses. Caffeic acid’s antioxidant effects are often investigated in this biological context.
