Curcumin

Curcumin is a yellow polyphenolic compound found in turmeric and used as a food colorant. Researchers study its biological effects, although its poor absorption limits many proposed uses.

Curcuminoids: Curcuminoids are the related polyphenolic compounds that give turmeric its yellow color. Curcumin is the principal member of this pigment family.
Turmeric: Turmeric is a spice made from the rhizomes of Curcuma longa and a source of curcumin. It is the traditional food source from which curcumin is obtained.
Curcuma longa: Curcuma longa is a flowering plant whose rhizomes are the source of turmeric. Its rhizomes contain curcumin alongside other curcuminoids.
Demethoxycurcumin: Demethoxycurcumin is a turmeric curcuminoid structurally related to curcumin but lacking one methoxy group. It occurs alongside curcumin and differs in structure and measured biological properties.
Keto–enol tautomerism: Keto–enol tautomerism is the interconversion of chemical structures differing in proton position and double-bond placement. Curcumin’s tautomeric forms affect its color, stability, and chemical reactivity.
Food coloring: Food coloring is a substance added to food to impart or restore color. Curcumin is used to produce yellow color in foods.
Pierre-Joseph Pelletier: Pierre-Joseph Pelletier was a French chemist known for isolating plant alkaloids and other natural products. He and Joseph Caventou reported isolating turmeric’s yellow coloring matter in the nineteenth century.
Bisdemethoxycurcumin: Bisdemethoxycurcumin is a turmeric curcuminoid lacking the two methoxy groups present in curcumin. It is another related pigment, distinct from curcumin’s molecular structure.
Photochemistry: Photochemistry studies chemical changes caused by absorption of light. Light can trigger curcumin degradation and alter its activity.
Dietary supplement: A dietary supplement is a product intended to add nutrients or other substances to the diet. Curcumin is widely sold in concentrated supplement formulations.
