Freeze-drying

Freeze-drying is a dehydration process that freezes material, lowers pressure, and removes ice by sublimation. It preserves much of the material’s structure and composition.

Sublimation: The phase transition in which a solid changes directly into a gas without becoming liquid. Ice leaves the frozen material as vapor during the primary drying stage.
Lyophilized vaccine: A vaccine dried by freezing and sublimation to improve stability during storage. Freeze-drying can extend vaccine shelf life when liquid formulations are unstable.
Richard Altmann: A German pathologist who described a method for drying biological tissues under vacuum in the late nineteenth century. His early work helped establish vacuum-based preservation before modern freeze-drying.
Spray drying: A drying method that rapidly turns atomized liquid droplets into powder using hot gas. It is faster and often cheaper, but heat can damage sensitive materials.
Vacuum drying: A drying method that removes moisture under reduced pressure, lowering the temperature needed for evaporation. Reduced pressure enables ice to sublime at temperatures that limit heat damage.
Lyophilized coffee: Instant coffee produced by freezing brewed coffee and removing its ice under reduced pressure. The method preserves soluble coffee solids in a porous form that dissolves readily.
Arsène d’Arsonval: A French physiologist who studied low-temperature preservation and vacuum drying of biological materials. His laboratory work contributed to the scientific foundations of lyophilization.
Air drying: The removal of moisture by exposing material to moving air at ambient or elevated temperatures. It avoids vacuum equipment but can cause greater heat exposure and structural change.
Freezing: The phase transition in which a liquid becomes a solid as it loses thermal energy. Freezing immobilizes water before pressure is lowered and ice is removed.
Cryopreservation: The preservation of biological material at very low temperatures to limit damage and degradation. Unlike freeze-drying, cryopreservation stores material frozen rather than removing its water.
