Gelatin

Gelatin is a mixture of proteins produced by partially breaking down collagen from animal connective tissues. It forms a heat-reversible gel when hydrated and cooled.

Collagen: Collagen is a family of structural proteins that gives connective tissues tensile strength. Gelatin is made by partially breaking down collagen’s molecular structure.
