Kefir

Kefir is a tangy fermented beverage made by culturing milk or sugar water with kefir grains, communities of bacteria and yeasts.

Kefir grains: Kefir grains are gelatinous communities of bacteria and yeasts embedded in a polysaccharide matrix. These reusable cultures inoculate the liquid and develop its characteristic fermentation.
Lactic acid bacteria: Lactic acid bacteria are a group of bacteria that produce lactic acid from carbohydrate metabolism. They are major members of kefir communities and drive its acidification.
Milk kefir: Milk kefir is a fermented dairy drink made with kefir grains and animal or plant-based milk. It is the best-known form, with acidity and texture shaped by milk fermentation.

Lactose intolerance: Lactose intolerance is difficulty digesting lactose because of insufficient lactase enzyme activity. Fermentation lowers kefir's lactose content, so some people with intolerance tolerate it better than milk.
