Knife blade

A knife blade is the sharpened or pointed part of a knife that cuts or pierces material. Its geometry, material, and edge condition determine how it performs.

Cutting: The separation of material by applying force through a sharp edge or tool. A blade performs cutting by concentrating force along its edge.
Steel: An iron-based alloy whose properties depend chiefly on carbon content and other alloying elements. Steel is the most common material family for knife blades.
Chef's knife: A broad, general-purpose kitchen knife designed for slicing, chopping, and mincing. Its curved edge and broad blade support repeated food-preparation cuts.
Scissors: A cutting tool made of two pivoted blades that shear material between their edges. Unlike a knife blade, scissors cut through opposing edges that close together.
Knife sharpening: The process of restoring a knife’s cutting edge by removing or reshaping material. Sharpening renews a blade’s edge as wear rounds or damages it.
Blade edge: The narrow boundary of a blade that contacts and separates material. Its sharpness and shape determine how readily the blade begins a cut.
Stainless steel: Steel containing enough chromium to resist corrosion by forming a protective surface layer. Knife blades made from it trade some sharpening ease for corrosion resistance.
Paring knife: A small kitchen knife used for precise hand-held tasks such as peeling and trimming. Its short blade gives fine control for detailed cutting.
Saw: A tool with a toothed blade that cuts material through repeated strokes. A saw removes or separates material with teeth rather than a continuous knife edge.
Honing: The maintenance of a cutting edge by realigning it, usually without substantial material removal. Honing can improve cutting performance between sharpening sessions.
