Louis Pasteur

Louis Pasteur was a French chemist and microbiologist whose experiments linked microorganisms to fermentation and disease. He developed pasteurization and vaccines against anthrax and rabies.

Germ theory of disease: The theory that specific microorganisms can cause specific diseases. Pasteur’s experiments helped establish microbes as causes of infection.
Fermentation: The microbial conversion of sugars into products such as alcohol, acids, or gases. Pasteur showed that distinct microorganisms drive distinct kinds of fermentation.
École Normale Supérieure: A French grande école in Paris that trains researchers, teachers, and public officials. Pasteur studied there and later returned as a chemistry professor and administrator.
Émile Roux: A French physician and microbiologist who helped develop diphtheria antitoxin and led the Pasteur Institute. Roux collaborated with Pasteur on rabies research and vaccine development.
French wine industry: A major agricultural and commercial sector producing wine across France’s regions. Wine spoilage prompted Pasteur’s investigations into fermentation and heat treatment.
Pasteurization: A heat treatment that reduces harmful microorganisms in food and drink without fully sterilizing them. Pasteur developed the process to prevent spoilage in wine and beer.
Spontaneous generation: The historical claim that living organisms can arise from nonliving matter under ordinary conditions. Pasteur’s swan-neck flask experiments challenged this explanation for microbial growth.
Crystallography: The study of the arrangement of atoms in crystalline solids. Pasteur’s early work on crystal asymmetry established his reputation as a chemist.
Charles Chamberland: A French microbiologist and engineer who developed the Chamberland filter and worked at the Pasteur Institute. His filtration work enabled experiments with pathogens and vaccine preparation.
Pébrine: A silkworm disease caused by the microsporidian parasite Nosema bombycis. Pasteur identified its contagious agent while investigating France’s silkworm crisis.
