Mucilage

Mucilage is a viscous plant substance composed largely of polysaccharides that swell in water. Plants produce it for functions including water storage, seed germination, and protection.

Polysaccharide: A carbohydrate polymer made of chains of monosaccharide units. Mucilage’s water-swelling behavior arises largely from its polysaccharide chains.
Psyllium: The seed husks of Plantago species, rich in soluble dietary fiber that swells in water. Psyllium mucilage thickens in water and is used as a fiber supplement.
Plant cell wall: A structural layer surrounding plant cells, composed mainly of cellulose, hemicelluloses, and pectins. Mucilage polysaccharides often resemble or derive from cell-wall materials.
Seed dispersal: The movement of seeds away from their parent plant before germination. Sticky or soil-binding mucilage can help anchor seeds where they land.
Hydrogel: A water-swollen network of hydrophilic polymers that retains its structure. Mucilage absorbs water and forms gel-like material around plant tissues.
Chia seed: The edible seed of Salvia hispanica, whose coat releases a gel-forming mucilage when wet. Its conspicuous seed-coat mucilage is used to thicken foods.
Seed coat: The outer covering of a seed, formed from maternal plant tissues. Many seeds release mucilage from specialized cells in the seed coat.
Seed germination: The process by which a seed resumes growth and develops into a seedling. Seed mucilage retains moisture around seeds and can influence germination.
Pectin: A family of plant cell-wall polysaccharides rich in galacturonic acid. Pectin can contribute to the gel-forming polysaccharides in mucilage.
Okra: A flowering plant whose edible pods contain mucilage that contributes to their slippery texture. Okra’s cooking texture is a familiar example of plant mucilage in food.
