Potassium benzoate

Potassium benzoate is the potassium salt of benzoic acid, used mainly as a food preservative. It inhibits yeasts, molds, and some bacteria, especially in acidic products.

Benzoic acid: An aromatic carboxylic acid used in food preservation and as a starting material for many chemicals. In acidic foods, benzoate shifts toward this more antimicrobial, uncharged form.
Food additive: A substance intentionally added to food to perform a technological function or affect its characteristics. Potassium benzoate is added to foods to delay microbial spoilage.
