Pungency

Pungency is a sharp, often irritating sensory quality produced by certain foods and odors. It includes sensations such as chili heat and the sting of vinegar.

TRPV1: A sensory ion channel activated by heat, acidity, and compounds including capsaicin. It transmits the burning sensation caused by chili capsaicin and some other pungent compounds.
Taste: The perception of dissolved substances through receptors in the mouth. Pungency is often called a taste, though its characteristic sting is not a basic taste.
Scoville scale: A scale for rating chili pepper pungency based on capsaicinoid concentration or sensory testing. It quantifies the capsaicin-driven pungency of chili peppers.
Irritant: A substance that causes inflammation or discomfort at a site of contact. Pungent compounds are often irritants, though sensory pungency can occur without lasting tissue damage.
Capsicum: A genus of plants that includes chili peppers and their capsaicinoid-producing varieties. Its fruits are a prominent source of capsaicin-driven pungency.
