Rice cooker

A kitchen appliance that cooks rice by heating water and grains, then commonly switches to a keep-warm mode when the water is absorbed.

Thermostat: A device that senses temperature and controls heating by switching a circuit on or off. In many rice cookers, it helps end cooking when the inner pot's temperature rises above boiling.
Oryza sativa: The Asian rice species that supplies most rice eaten worldwide. Its many varieties differ in grain shape, starch composition, and cooking behavior.
Brown rice: Whole-grain rice that retains its bran layer and germ after milling. Its intact bran makes it cook more slowly and often requires a dedicated cooker setting.
Stovetop rice cooking: Rice preparation in a pot heated on a stove, controlled by a cook. It uses the same absorption principle but requires more direct attention to heat and timing.
Boiling point: The temperature at which a liquid's vapor pressure equals the surrounding pressure and it boils. While free water remains, its near-constant boiling temperature anchors the cooker's basic shutoff logic.
Amylose: A mostly linear glucose polymer and one of the principal components of starch. Its proportion helps explain why some cooked rice stays firm and separate while other rice turns sticky.
Congee: A rice porridge made by simmering rice in a large amount of water. Long, gentle cooking in a rice cooker can turn grains into a soft porridge.
Pressure cooker: A sealed cooking vessel that raises pressure to increase the boiling temperature of water. Pressure cooking can shorten rice preparation, but it cooks under conditions unlike a basic rice cooker.
Latent heat of vaporization: The energy required to change a unit mass of liquid into vapor without changing its temperature. Evaporating the remaining water consumes heat before the pot can warm enough to trigger shutoff.
Amylopectin: A highly branched glucose polymer and one of the principal components of starch. Its abundance contributes to the soft, cohesive texture of many short-grain rice varieties.
