Knowra Soft serve Soft serve Soft serve is an aerated frozen dessert made by freezing and dispensing a liquid mix through a machine. It is served immediately, before hardening in a freezer.
Soft-serve machine : A machine that freezes, aerates, and dispenses soft-serve mix on demand. Its refrigerated barrel and dasher turn liquid mix into a dispensed frozen dessert.
Milk fat : The fat naturally present in milk, also added to dairy products to alter richness and texture. In dairy soft serve, fat contributes richness and helps shape the dessert’s smooth mouthfeel.
Ice cream cone : A crisp, edible cone used to hold and serve ice cream and other frozen desserts. Its shape supports a freshly dispensed swirl while making the serving portable.
Hard ice cream : Ice cream frozen and hardened for storage before being scooped for serving. Its storage-hardening step contrasts with soft serve’s immediate dispensing and consumption.
Overrun (ice cream) : The increase in frozen dessert volume caused by air incorporated during freezing. Air incorporated in the machine makes soft serve lighter and gives it a smooth texture.
Milk solids-not-fat : Milk components other than water and fat, including proteins, lactose, and minerals. These solids add body and influence how the mix freezes and retains air.
Frozen yogurt : A frozen dessert made with a cultured dairy base that gives it a characteristic tang. It is often dispensed like soft serve, but its cultured base distinguishes its flavor and composition.
Gelato : An Italian frozen dessert typically served warmer and with less incorporated air than conventional ice cream. Like soft serve, gelato can be soft to eat, but it is generally batch-frozen and served from a case.
Dynamic freezing : Freezing a liquid while continuously agitating it to control ice-crystal growth. Continuous scraping freezes the mix while limiting the growth of coarse ice crystals.
Emulsifier : A substance that helps otherwise difficult-to-mix liquids, such as fat and water, remain dispersed. Emulsifiers help stabilize fat distribution and support the texture produced during freezing.
