Strecker aldehyde

A volatile aldehyde formed when an amino acid loses its carboxyl group and reacts with a carbonyl compound, leaving one fewer carbon atom than the original amino acid.

Strecker degradation: A reaction in which amino acids are converted into aldehydes, carbon dioxide, and other products through reaction with carbonyl compounds. This reaction produces Strecker aldehydes by removing the amino acid’s carboxyl carbon.
3-Methylbutanal: A volatile aldehyde with a malty odor, formed chiefly from leucine during Strecker degradation. It is a characteristic Strecker product of leucine in foods and beverages.
