Sucralose

Sucralose is a high-intensity sweetener made by replacing three hydroxyl groups in sucrose with chlorine atoms. It provides sweetness with negligible calories and is used in foods, drinks, and tabletop products.

Sucrose: Sucrose is a disaccharide composed of glucose and fructose, commonly known as table sugar. Sucralose is synthesized by selectively replacing three hydroxyl groups in this sugar.
Diet soda: Diet soda is a carbonated soft drink formulated with little or no sugar and few calories. Sucralose is one of the sweeteners used to replace sugar in some varieties.
Tate & Lyle: Tate & Lyle is a British food-ingredients company with a major role in commercializing sucralose. The company developed and marketed sucralose as a food sweetener.
Acceptable daily intake: An acceptable daily intake is an estimate of the amount of a substance that can be consumed daily over a lifetime without appreciable health risk. Regulators use this measure to set guidance for chronic sucralose exposure.
Aspartame: Aspartame is a low-calorie artificial sweetener made from two amino acids and a methyl group. It is another high-intensity sweetener, but its chemistry and heat stability differ from sucralose.
Sweet taste receptor: Sweet taste receptors are cell-surface proteins that detect sweet compounds and signal taste cells. Sucralose activates the human sweet taste receptor despite differing from sucrose chemically.
Tabletop sweetener: A tabletop sweetener is a concentrated product used to sweeten food or drinks at the table. Sucralose is sold in packets and granulated blends for direct consumer use.
Leslie Hough: Leslie Hough was a chemist involved in the discovery of sucralose at Queen Elizabeth College. His research on chlorinated sugars led to the compound’s discovery.
Food and Drug Administration: The Food and Drug Administration is a United States agency responsible for regulating foods, drugs, and related products. The FDA approved sucralose for use as a food sweetener in the United States.
Saccharin: Saccharin is a nonnutritive artificial sweetener with a long history of food use. It offers a chemically distinct alternative to sucralose for reducing sugar in foods.
