Summer squash

Summer squash are tender-skinned squashes harvested while immature, before their seeds and rinds harden. The group includes zucchini, yellow crookneck, and pattypan varieties.

Cucurbita pepo: A squash species that includes zucchini, many pumpkins, and several other cultivated forms. Most familiar summer squash varieties belong to this species.
