Udon

Udon is a thick Japanese noodle made from wheat flour, water, and salt. It is served in hot broth, chilled with dipping sauce, or in other preparations.

Kake udon: A simple udon dish served in hot dashi-based broth. It shows udon in its most direct hot-soup preparation.
Wheat flour: A powder produced by milling wheat grains and used in breads, noodles, and other foods. Its gluten-forming proteins give udon dough structure and chew.
Kagawa Prefecture: A prefecture on Japan’s island of Shikoku, widely associated with Sanuki udon. Its noodle shops and wheat-growing history made it a center of udon culture.
Soba: Japanese noodles made primarily from buckwheat flour, sometimes blended with wheat flour. Soba is thinner and buckwheat-based, unlike wheat-flour udon.
Zaru udon: Chilled udon served on a draining tray with a dipping sauce. It offers a cool alternative that highlights noodle texture.
Gluten: A network of wheat proteins that forms when flour is hydrated and worked. Kneading develops the elastic network that helps udon hold its shape.
Sanuki Province: A former Japanese province corresponding largely to present-day Kagawa Prefecture. Sanuki udon takes its name from the historical region where the style developed.
Ramen: Japanese wheat noodles, commonly served in seasoned broth and made with alkaline salts. Ramen’s alkaline dough and springy bite distinguish it from udon.
Kitsune udon: Udon topped with seasoned deep-fried tofu, usually in broth. Sweet aburaage gives this familiar udon bowl its defining topping.
Udon dough: A wheat-flour dough made with water and salt for shaping into udon noodles. Its hydration and kneading determine much of the finished noodle’s texture.
