Vanillin

Vanillin is an aromatic aldehyde and the principal flavor and aroma molecule in vanilla beans. It is also made synthetically and used in foods, fragrances, and other products.

Aromaticity: The chemical stability and characteristic reactions associated with cyclic, conjugated molecular systems. Vanillin’s benzene ring gives its molecule aromatic character.
Vanilla curing: The postharvest treatment that develops vanilla beans’ characteristic aroma and flavor. Curing releases vanillin from precursors stored in the developing bean.
Food flavoring: Substances added to food to create, modify, or intensify taste and aroma. Vanillin is used to provide vanilla character in many foods.
Vanilla: The flavor and fragrance derived chiefly from cured pods of orchids in the genus Vanilla. Vanillin supplies vanilla’s principal characteristic molecule but not its full flavor profile.
Vanilla absolute: A concentrated aromatic extract obtained from vanilla beans using solvent extraction. It retains a complex aroma mixture that purified vanillin lacks.
Aldehyde: An organic compound containing a carbonyl group bonded to at least one hydrogen atom. Vanillin’s aldehyde group distinguishes it from related vanilla compounds.
Glucovanillin: A glycoside in unripe vanilla beans that releases vanillin when hydrolyzed. Enzymatic breakdown of this precursor produces vanillin during curing.
Perfume: A fragrant mixture formulated for application to the body or surroundings. Vanillin adds sweet, warm notes to many fragrance compositions.
Vanilla orchid: A climbing orchid in the genus Vanilla, whose fruits are cured to produce vanilla beans. Its cured pods are the natural source most associated with vanillin.
Vanilla oleoresin: A concentrated extract of vanilla beans containing volatile and nonvolatile flavor compounds. Its bean-derived mixture contrasts with vanillin as a single purified molecule.
