Spice

A spice is an aromatic plant-derived substance used to flavor food, usually obtained from seeds, bark, roots, or fruits. Its concentrated flavors and aromas distinguish it from leafy herbs.

Essential oil: A volatile mixture of aromatic compounds produced by plants and other organisms. Many spices owe their characteristic aromas to volatile compounds concentrated in essential oils.
Tempering (cooking): A cooking technique that briefly fries spices in hot fat to extract and disperse their flavors. It draws fat-soluble aromas from whole spices before they are added to a dish.
